Aaaahhhh, the joy of summer. I love actually having time to cook real meals for my family!! On the menu for tonight: Lemon-herbed baked chicken. I start by buttering and seasoning the bottom of my roasting pan. I used garlic powder, onion powder, seasoned salt, black pepper, and rosemary.
I used Cornish game hens; you may also use a regular fryer or baking chicken. Place bird(s) in roasting pan breast side up.
Next, I poured lemon juice over the fowl.
With the same seasonings, season meat to your liking. You may also use thyme rather than rosemary for this recipe; it comes out just as nice. I prepare boxed stuffing ahead of time, adding special elements such as chopped nuts and dries cranberries. You can visit my recipe for boxed stuffing makeover in the archives here. Put a small amount of stuffing in a separate container and set aside. The smaller portion of stuffing will be for inside the fowl. I do this to avoid cross-contamination of the stuffing. We usually have the remaining as a side dish.
Next, I drizzle the bird(s) with a small amount of olive oil, and add approximately 1-2 tablespoons butter or margarine to each bird. Stuff the birds with the prepared stuffing. All ready for the oven!!
Bake at 350 in a covered roasting for approximately one hour and fifteen minutes. Halfway through, I take bird(s) out and baste using the same method you would use when basting a turkey. I make sure to baste underneath the skin and in between the legs and under the wings.
